Soups and Sandwiches

 

Alphabet Soup

In a 4- to 6 quart pan, combine and bring to a boil

  • 3 quarts water
  • 5 tablespoons tomato paste
  • 1 3/4 cups corn or 1 15-ounce can, drained
  • 1 3/4 cups peas or 1 15-ounce can, drained
  • 1 cup whole-wheat alphabet noodles
  • 1 1/2 cups grated zucchini
  • 2 tablespoons onion powder
  • 1 1/2 teaspoons onion salt
  • 1 1/2 teaspoons garlic salt
  • 1/2 teaspoon celery salt
  • 1-1 1/2 teaspoon salt
  • 4 tablespoons olive oil, optional

Reduce heat and simmer for about 30 minutes.
Serve with your favorite sandwich.

Garbanzo Sandwich Spread

Mash in a small bowl
1 15-ounce can garbanzos, drained, or 2 cups cooked

Add

  • 1/4 - 1/3 cup mayonnaise
  • 1/2 cup chopped olives
  • 1/2 teaspoon garlic salt
  • 3/4 teaspoon garlic salt powder
  • 1/2 teaspoon garlic granules

Spread on bread or rolls and add favorite accompaniments.

Variation: Try adding green peppers chopped very fine, or cucumbers, chopped fine.
