
Salad Ideas Coleslaw:
- Grate cabbage into a bowl.
- Add a little grated carrot and moisten with coleslaw dressings.
Grated carrot salad:
- Grate carrots and moisten with mayonnaise of your choice.
- Sprinkle in a few chopped nuts if desired.
Mixed greens salad:
- Mix greens with dressing of your choice.
- Excellent sprinkled with mock Parmesan "Cheese" one of our families favorites.
- Suggested greens: romaine, red or green leaf lettuce, spinach, Boston lettuce, iceberg lettuce, fresh parsley, fresh
cilantro, etc

Macaroni Salad
Bring to a boil and cook for about 15 minutes
2 cups elbow macaroni (soy artichoke, or whole-wheat)
Rinse the macaroni and transfer it to a mixing bowl. Add
- 1/2 cup chopped red onion
- 1/2 cup chopped celery
- 1 cup fresh, frozen, or canned green peas
- 1 teaspoon onion salt
- 1 cup cubed Mock Chicken
- Add 1/2-1 cup of tofu onion dip or soy Ranch Dressing to obtain desired moistness.
Potato Salad
- Combine in a large bowl
- 8-10 large boiled potatoes, cubed
- 1 onion, chopped fine
- 2 stalks celery, chopped fine
- 1 1/2-2 cups of tofu onion dip or soy ranch dressing
- 1 tablespoon dill weed
- 1 tablespoon garlic granules salt to taste
- 1 recipe of scrambled tofu
Mix well. Chill before serving. Garnish with dried parsley and paprika.
